I glue mine up once it the oil is no longer tacky.  You can play as soon as the glue is set up.  I will give it a test run after an hour or so to make sure it's not dead.  I also like to let the pot sit for a week or two before I send it to the customer.  I find it sounds better.

I just glued mine up, I let the soundboard sit with a weight on it for about 30 minutes before gluing in the surface. Fingers crossed for an acceptable outcome!
